Almond Goji Berry Protein Bites

Almong goji protein bars

These taste just as scrumptious as the look.

Whip up a batch of these babies and keep them near your desk, and you’ll never have to go on a 3 pm cookie run again.

In addition to healthfully satisfying your sweet tooth, they make a great pre-or post-workout snack, for those days when you’re rushing from the office to the gym and need something light but that will squash the hunger pangs.

Just a square or two is hearty enough to leave you feeling satisfied. With 3 simple ingredients and a prep time under 5 minutes, there’s no reason not to keep a batch of these on hand.

Instructions
  1. In a blender, blend almonds into a flour. (A bullet blender works well here).
  2. Add the dates and goji berries, and then blend again until a smooth paste forms. Press it into a small rectangular tupperware, and then flip upside down onto plate. (Use a butter knife to release the sides if you need to, but it should pop pretty easily out of the tupperware.
  3. Finally, cut the almond date block into squares or bars. Enjoy!

HI Maria – love your recipes! Quick question: do we need to wash the goji berries first? Thanks!

    1. maria says:

      Hi Jennie,

You don’t have to wash the berries, but if buying them in bulk you may just want to give them a good inspection. Depending on the recipe, I sometimes soak them to make them chewier, although note they will go bad faster that way.. For this particular recipe, you shouldn’t need to wash them. Enjoy!

  3. Linda says:

Sounds good! But what are the calories and other nutrition in these?

  4. Linda says:

Ok – Had to do my own research. By my research this adds up to 1,429 calories and 72 grams of fat. If you eat 1/12 of the total recipe that would be 119 calories and 6 g of fat for each 1/12 of the total batch.
