If you didn’t know this by now, I’m pretty anti-sugar. Ok, really, REALLY anti-sugar.
It makes us fat; It gives us wrinkles, inflammation, and blemishes; ; (the number one killer in America, mind you); ; makes us obese; and it . (Sorry if I ruined your 3pm chocolate chip cookie run…just trying to save your life!)
And if you’ve been following along, you know that I attribute a little sugar-happy slip up as the trigger for my terrible flu a few weeks ago!
Now the sugar I’m talking about is refined sugar…the powdery white stuff that gets dumped into just about everything.
You can still eat sweet things, you just need to go back to the basics and get your sweetness from wiser sources…like nature’s original candy: fruit.
While fruit does naturally contain sugar, it also contains fiber to slow down blood sugar spikes and fill you up, and vitamins and minerals to provide anti-inflammatory and antioxidant effects. Fruit is health food.
It drives me bananas when someone is scared to eat fruit becuase they think it will make them gain weight. As part of an overall healthy diet, loaded with vegetables, whole grains, and healthy proteins, fruit will absolutely not make you fat. In fact, studies show people who eat fruit, weight less. Using recipes like this, which mimic “treats” gives you the satisfaction feeling you crave without the detrimental effects. After all, you’re really just eating fruit! Another good option is this banana n’ice cream.
Now, from time to time I use things like coconut sugar or stevia to sweeten things as well. When buying packaged products, I will never buy things that contain: sugar, cane sugar, beet sugar, brown sugar, high fructose corn syrup, or agave nectar. (Ok, ok, I make ONE exception with agave nectar…Luna & Larry’s Coconut Bliss ice cream… It’s the only non-dairy coconut based ice cream that tastes good. I have it a handful of times a year at most. And unfortunately, I ate it right before I got the flu, which led me to believe the sugar rush crushed my immune system and let the flu take over…so I won’t be eating it again anytime soon).

- 2 bananas, peeled
- 2 tbs. coconut butter (not oil)
- 1/4 cup almonds
- 1/4 tsp pure vanilla extract
- slivered almonds
- sliced strawberries
- In a blender, bine all pudding ingredients and blend until smooth.
- Pour into a bowl, and top with almonds and strawberries. Serve right away, or refrigerate and serve later.

I definitely want to try this, where do I find coconut butter (Whole Foods?). Do you need to chill or freeze the bananas or just use them at room temp?
